Celebrating Pride Month with Rainbow Recipes: Yellow Lentil Dahl

To celebrate Pride Month this year, myGwork member and food creative Fernando Sanchez has created summer recipes (in both English and Spanish) for each color of the Pride rainbow.

For today’s recipe in our Pride Rainbow Recipe series, we’re celebrating the color yellow, with a spicy Indian lentil ‘dahl’ dish.


Servings: 6-8

Preparation Time: 40 minutes

INGREDIENTS

  • 250 gr. split yellow lentil, sorted and rinsed
  • Piece of ginger
  • 1 litre of water
  • 2 whole red chillies
  • 1 large red onion chopped in small cubes
  • 3 garlic gloves chopped
  • 3 plum tomatoes, cored and cut it in small cubes
  • 2 tsp of turmeric
  • 6 tbsp ghee (clarified butter)
  • 2 tbsp grated and chop ginger
  • 100 gr. ghee
  • 3 tbsp black mustard seeds
  • 8 dried red chillies
  • 20 gr. fresh curry leaves
  • some salt

PREPARATION

Step 1: Mix the washed lentils, piece of ginger, salt and chillies with the water in a medium pan and bring to boil on low-medium heat as yellow lentils tend to boil-over very quickly. Keep aside.

Step 2: Heat 6 tbsp of ghee in a medium size pot, add the red chopped onion, garlic and grated ginger. Cook until light brown in color. Now add the chopped tomatoes and turmeric and cook for 5 minutes. Add the cooked lentils and cook around 14-20 minutes more.

Step 3: Heat the ghee in a frying pan and add the black mustard seeds and red chillies. Fry until the seeds start popping, then add fresh curry leaves. Be careful as it will splash oil. Cook for about a minute and added to the cooked lentil mixture. Mix well and r serve with steamed basmati rice.

Receta para Dahl de Lentejas Amarillas

Este año celebramos el mes de orgullo con una serie de recetas inspiradas en los colores del arcoiris. Continuamos la serie con una receta de dahl de lentejas que simboliza el color amarillo, creada por nuestro chef inovador y artistico, Fernando Sanchez.

Raciones: 6-8

Tiempo de preparación: 40 minutes

INGREDIENTES

  • 250 gr. lentejas amarillas lavadas
  • Trozo de gengibre
  • 1 litro de agua
  • 2 chilis rojos
  • 1 cebolla roja cortada en daditos
  • 3 dientes de ajos cortados en daditos
  • 3 tomates de pera sin corazón y cortados en daditos
  • 2 cucharaditas de curcuma
  • 6 cucharadas de ghee (mantequilla clarificada)
  • 2 cucharadas de jengibre rallado y troceado
  • 100 gr. ghee (mantequilla clarificada)
  • 3 cucharadas de semillas negras de mostaza
  • 8 chilis rojos secos
  • 20 gr. hojas de curry frescas
  • un poco de sal

PREPARACION

1. En una cazuela mediana a fuego medio poner las lentejas, el trozo de jengibre, sal, chillies y el agua. Llevarlo a ebullición y reservar.

2. En una cazuela mediana añadir el ghee, la cebolla roja troceada, el ajo y el jengibre. Rehogamos hasta que este bien dorado. Seguido añadiremos el tomato en dados y la curcuma y lo rehogaremos unos 5 minutos. Finalmente añadiremos las lentejas y cocinaremos todo durante 15-20 minutos.

3. En una sartén calentamos el ghee con las semillas de mostaza y los chilis rojos secos. Freír hasta que las semillas empiecen a saltar como las palomitas y añadiremos las hojas de curry fresco, cuidado ya que salpicaran al echarlas. Cocinar un minuto y añadir sobre las lentejas previamente cocinadas. Mezclar bien y listo para servir acompañado con arroz basmati.
