Cooking With Pride, myGwork member and chef Fernando Sanchez prepares a popular Dim Sum favorite from Hong Kong. This week's delicious and nutritious recipe is Turnip Cake. A more accurate name would be radish cake, as it’s traditionally made from the long white radish that's commonly used in Asian cooking.

TURNIP CAKE
Serves: 4 people

Step 1: Add the grated radish and one cup of water to a large pan and bring to a simmer. Cook for around 20 minutes. The radish will produce liquid when cooking that we will use after. Scoop the cooked radish into a large bowl to cool down and add that extra liquid in.
Step 2: Place a pan over medium heat. Add a couple of tablespoons of vegetable oil. Add the shrimp, mushroom, and sausages, and cook for about five minutes. Stir in the chopped spring onion and remove from the heat to cool.
Step 3: Add rice flour, cornstarch, sugar, and salt to the bowl with the radish. Mix well until the ingredients are well incorporated. Add in the cooked shrimp, mushroom and sausages. If you like the cake a bit softer, add a bit more of the cooking water in. Mix well. Pour the mix into a well-oiled loaf pan and steamed it for one hour.
Step 4: Remove the loaf pan from the steamer and let the cake to set for around one hour. Once cooled, turn it out into a cutting board. Slice it 1cm thick pieces and pan fry the cake on both sides until golden and crispy. Serve with Chinese chili oil.

PASTEL DE RABANO, CON GAMBAS Y SALCHICHA CHINA
Esta semana cocinamos con orgullo Pastel de Rabano, con gambas y salsicha china – una receta preparado por nuestro chef inovador y artistico, Fernando Sanchez.

INGREDIENTES
PREPARACIÓN
1. Añadir el rábano rallado y una taza de agua a una sartén grande y cocine a fuego lento. Cocine durante unos 20 minutos. El rábano producirá líquido al cocinar que
tilizaremos después. Coloque el rábano cocido en un bowl grande para enfriar y agregue el líquido adicional.
2. Coloque una sartén a fuego medio. Añadir un par de cucharadas de aceite vegetal. Añade los langostinos, los shitake y las salchichas picadas, y cocine durante unos cinco minutos. Añade la cebolleta picada y retire del fuego para que se enfríe.
3. Añadir harina de arroz, maicena, azúcar, sal al bowl con el rábano. Mezclar bien hasta que los ingredientes estén bien incorporados. Agregue los langostinos cocinados, los champiñones y las salchichas. Si te gusta el pastel un poco más suave, agrega un poco más de agua de cocción. Mezclarlo bien. Vierta la mezcla en un molde engrasado y cocine al vapor durante una hora.
4. Retire el molde del vapor y deje que el pastel se asiente durante aproximadamente 1 hora. Una vez enfriado, desmóldelo en una tabla de cortar. Córtelo en trozos gruesos de 1 cm y freír el pastel por ambos lados hasta que esté dorado y crujiente. Servir con aceite de chile chino.
